ORIGIN

The juniper berry, also called ‘poor man’s pepper’, is grown almost everywhere in the world: North America, Europe, Asia and Africa. Its scientific name is Juniperus Communis. It belongs to the Cupressaceae family along with cypress and sequoia, among others.

The origins of the juniper seed go back to ancient times; it was mentioned in the Eber papyrus in around 1500 BC. It was also widely used by the Ancient Greeks and Romans, as well as in the Middle Ages.

CULTIVATION METHOD

The juniper tree, measuring from 50cm to 15m in height, grows in sandy and permeable soils. It blooms from April to May. The blooming of the juniper tree is subtle, with the emergence of small cones. It produces both male and female flowers, which are totally different.

Only females produce the famous juniper berry, which can vary in diameter from 4 to 9mm. The juniper berry is produced by the tree throughout its life, i.e. as long has 200 years. The fruit ripens and turns from black to blue in the second year. It is harvested once ripe, dried on a tray and then sifted. The juniper berry is usually harvested from late August to mid-September.

HOW TO USE IT WHEN COOKING

Its unique feature is its peppery and sour flavour. The juniper berry can be sold fresh or dried, infused, in the form of essential oil or even crushed.

It is often used in northern European cuisine and usually goes with fennel, clove, laurel leaves, marjoram and mint.

The juniper berry enhances the flavour of stews, marinades, terrines, turnips, stuffed cabbage, sauerkraut, stocks, game in sauce and meatballs. It is also used in pâtés, cold meats and alcoholic beverages.
