ORIGIN

The caraway plant originates from the temperate regions of East Asia, North Africa and also northern and central Europe. Caraway seeds were used in Ancient Egypt as far back as 1500 BC. Caraway is one of the oldest spices in use. It has been widely used since the Middle Ages for its various properties and was then imported to Spain, Morocco and England. It was mainly used in this period to give taste to pastries and bread. Caraway was later cited in Act 2 of the William Shakespeare play ‘Henry IV’, where ‘Falstaff is invited to eat a meal of apple and caraway to aid digestion’.

Its scientific name is Carum Carvi and it belongs to the Apiaceae family. Caraway seeds are similar to anise, dill and fennel, whose seeds are used for their taste and smell.

CULTIVATION METHOD

Caraway, a herbaceous plant measuring from 50 to 75cm tall, grows in humid, humus- and limestone-rich soils. The plant needs both sun and protection from the wind to grow properly.
It usually blooms from May to July. Caraway is harvested at the end of this period. The fruit is often harvested when it is almost ripe.

Caraway seeds are ovoid in shape and slightly bent, with a brown and sometimes yellowish-brown colour. They can be sold in powder form, whole, dried or crushed.

HOW TO USE IT WHEN COOKING

The spice is extracted from the seeds of the plant. Its unique feature is its lemon and aniseed taste. Caraway seeds are milder than cumin, with which they are often confused. Their taste can flavour both sweet and savoury dishes. Ground caraway is particularly key in oriental cuisine. It is also widely used in Europe, specifically in German cuisine. Ground caraway adds great flavour to cakes, bread, sauerkraut, potatoes, cheese and goulash.

It should be stored out of direct sunlight and heat to preserve it for several months.
