ORIGIN

Turmeric, scientific name Curcuma Longa, originates from India, where it grows at altitudes of 1800-2000m. It belongs to the Zingiberaceae family, along with cardamom, Melegueta pepper, galangal and ginger.

Grown in South-East Asia since ancient times, turmeric is mentioned in texts from the 4th century as an aid to treat cardiovascular disease. Turmeric was nicknamed ‘Indian saffron’ and began to be imported into Europe in the 18th century.

CULTIVATION METHOD

Turmeric grows in rich, deep, humid, light and fresh soils. Measuring from 0.6cm to 1m in height, the herbaceous plant does not withstand frost and thrives in tropical climates. Turmeric blooms between June and September and is usually harvested in September.

The spice is obtained from the rhizome of the plant, which is yellow with a hint of orange. Fresh rhizome is usually boiled for a few minutes then dried, to produce ‘bulbs’ or ‘fingers’ that can then be crushed.

HOW TO USE IT WHEN COOKING

The main distinguishing feature of turmeric is its natural colouring power. Its flavour is bitter and slightly spicy. Turmeric is very popular in Indian and Indonesian cuisine, where it is mainly used in powder form. It is also used in slow-cooked sauces to add colour to fromage blanc, rice and pale sauces.

What’s more, turmeric in powder form flavours and gives a yellow colour to pilau rice and sauces for poultry and fish. Without turmeric, you can forget all your curry-based dishes!
