ORIGIN

Fenugreek, scientific name Trigonella Foenum-Graecum, is also called ‘sénégrain’ or ‘trigonella’. It belongs to the Fabaceae family.

The fenugreek seed originates from the Middle East. Over the years, this spice has spread to Asia (China) and around the Mediterranean. The Egyptians used it as far back as 1500 BC to treat burns. Fenugreek is even mentioned in many Egyptian papyruses. The fenugreek seed was grown in Ancient Rome and used to feed livestock. It finally made its way to France in the Middle Ages.

CULTIVATION METHOD

Measuring from 20 to 50cm in height, fenugreek grows in soils rich in nutrients and limestone and in areas with a hot and sunny climate. Fenugreek can be grown at altitudes of up to 1000m.

Fenugreek leaves are made up of three oval parts and their flowers are almost white when ripe. The most commonly sold part of fenugreek is the fruit, made up of yellow seeds with a strong and powerful odour. Fenugreek blooms from April to July and is harvested from May to October.

HOW TO USE IT WHEN COOKING

Fenugreek seeds and leaves have a bitter flavour similar to celery. The most commonly used ingredients in cooking are ripe and dried seeds, either whole or crushed.

Fenugreek seeds are used mainly in Chinese, Indian, Sri Lankan, north-west African and southern European cuisine. Fenugreek is one of the ingredients in some curry mixes and Indian pickles.
