ORIGIN

Dill (Anethum Graveolens), more colloquially known as ‘bastard fennel’ or ‘false anise’, originates mainly from the Mediterranean Basin. It belongs to the Apiaceae family. In France, it is found in Hérault and Aveyron.

This herb is very old; it was used over 5,000 years ago by the Ancient Egyptians for its medicinal properties. Dill was also used by the Greeks and Romans, particularly for its flavours and properties. Between the 7th century and the early 9th century, false anise was recommended by and very popular with Charles the Great. Dill made its appearance in England in the 16th century and then spread rapidly through the whole of Europe.

CULTIVATION METHOD

Dill grows in slightly dry or humid soils. The plant measures from 80cm to 1.5m. To grow properly, bastard fennel should be protected from the wind and exposed to sunlight.

It blooms between June and September, producing yellow flowers with a scent similar to fennel. Dill flowers contain seeds 2.5mm in diameter that are usually oval, flat and brown when ripe. This is when false anise should be harvested (from April to July).

HOW TO USE IT WHEN COOKING

Dill is nicknamed false anise because of its aniseed taste, which goes perfectly in northern European cuisine.

Dill flavours fish such as salmon, fromages frais, meat, sauces, soups and summer salads. Its seeds are often used to flavour liqueurs and preserves.
