ORIGIN

Green anise (Pimpinella Anisum) or anise originates from the Mediterranean Basin and the Middle East and belongs to the Apiaceae family of herbs.

This herbaceous plant was used as far back as ancient Egyptian and Roman times as it was thought to help digestion. Green anise seeds were commonly used in the Middle Ages and were very popular with Charles the Great. Over the years, this herb spread throughout Europe.

CULTIVATION METHOD

The green anise plant is easy to identify because of its green leaves, small white flowers and grey-green fruit with a strong scent.

Green anise grows in silico-calcareous, humus-rich soils in the sun and the plant can measure from 50 to 80cm in height. Green anise flowers emerge between July and August. Leaves are harvested just a few months after seeding. As for the seeds, they are harvested when ripe, usually in early September.

HOW TO USE IT WHEN COOKING

Green anise seeds can be eaten raw or cooked. They can be used in both sweet and savoury dishes. They are often used as whole fruit, dried, crushed or in powder form.

Green anise is very popular in Mediterranean cuisine and is also frequently used in Indian cuisine (especially in many drinks). Its roots are often used to make wines and liqueurs.
