ORIGIN

Thyme, also known as ‘wild thyme’ and ‘farigoule’ in Provence, originates from Mediterranean regions from western Europe to southern Italy. Its scientific name is Thymus Vulgaris and it belongs to the Lamiaceae family.

The term ‘Thymus Vulgaris’ comes from the Greek ‘thumon’, meaning ‘offering’. It was previously used for its pleasant scent when burned. The Ancient Greeks and Egyptians used it for various reasons. Thyme was introduced to Europe by the Romans, mainly for use in cosmetics. During the Crusades in the Middle Ages, thyme was a symbol of courage and lasting love.

Nowadays, it is used mainly in Mediterranean cuisine and in many dishes originating from the four corners of the world.

CULTIVATION METHOD

Thyme grows in light, chalky, clay and wet soils and can reach a height of up to 40cm. To grow properly, it needs exposure to sunlight. Thyme can grow at altitudes of up to 2000m. The plant has several slender, branched stems containing small, thin, green leaves that give off a strong scent.

It blooms from June to October and is harvested just before it blooms. Small, usually white flowers appear when the plant is in bloom.

HOW TO USE IT WHEN COOKING

Both dried thyme and fresh thyme are used. It is very popular in Mediterranean cuisine.

An ingredient in mixed herbs, it adds great flavour to stocks, sauces, stews and tomato-based dishes. It is also used in salads, vinaigrettes, pasta, ratatouille and lamb-based dishes.
