CULTIVATION METHOD

This pepper is recognisable at first glance by its long peduncle, to which it owes its nickname, ‘tailed pepper’. Cubeb pepper can also be called Indonesian pepper. Its scientific name is Piper Cubeba, as it belongs to the Piperaceae family.

The fruit grows on a vine. Cubeb pepper is obtained from berries, harvested before they are ripe, then dried in the sun.

HOW TO USE IT WHEN COOKING

Its slightly bitter but also minty taste will surprise you when flavouring your dishes.

Cubeb pepper is very popular in Asia and North Africa. It’s usually ground onto the plate.

Consider combining it with other peppers to blend the flavours. Cubeb pepper goes perfectly with fish, poultry and vegetable-based dishes but also, more surprisingly, in ice cream!
